Problem

How to underline only one piece of text using the Word Processor.

When selecting underline and highlight only one piece of text in the Word Processor all of the text ends up underlined.

Solution

When selecting the Edit Text tool, look at the tool settings. Click the small black arrow to expand the dialog and uncheck "Apply changes to all text"
